Nectar Sauvage

GENEROUSLY FUNKY BEER

Alexandre and Loni Roué started their adventure brewing in the South of France in 2020 during their time together at university. What started as a casual romance grew into a house, a brewery, two kids, a scruffy dog and a big garden with a little orchard.Migrating from the wine industry into beer, the two keep their feet firmly grounded in the core principles of the rustic winemaking they learned years ago. They now create beer with a focus on terroir and savoir-faire. Beer with soul, complexity, and courage.Although they make a few brews to please the local palate, their main focus is mixed fermentation beer: beer made with numerous strains of yeast and bacteria, gathered from the environment around them, or choosing selected strains to build complexity for specific recipes. Many of their brews have some kind of natural addition like local fruit or botanicals. They are fermented in barrel or amphorae, and they are never filtered or pasteurized. Their beer is alive; some take years to complete fermentation. Slow-working cultures take their time, producing a complexity rarely seen in modern brewing. This slow fermentation process creates products that can be aged for years, if not decades.Patient blends with complex flavours. Bold experimentation, where nature leads fermentation. This is what you can expect from Nectar Sauvage.

SAUVAGE SERIES

Premier Pas

2024 was a big year for us. New orchard, new brewery, new baby. Finally, everything we’d been hoping for materialized around our first spontaneous fermentation. It was brewed with wild hops harvested alongside the Argent Double, and aged on a bed of wild Mirabelle plums. Over time, this beer evolved from something immature to something complete. It just needed time to grow. The sweet plums give this beer its bright personality: intense fruit, soft acidity, and delicate tannins. Our first steps towards something great.ingredients: water, barley malt, wheat malt, wild Mirabelle plums, wild hops
allergens: gluten

CUT TEETH

This dark sour was pitched with a blend of seven Brettanomyces strains, French saison yeast, and a dusting of indigenous flora from the red fruit addition. That’s a lot. With a nod to Flanders, this dark farmhouse expresses black honey, dried fruit, and generous funk. Picked from our family orchard, handfuls of red currants and buckets of sour Guigne cherries give this beer a delightfully unexpected acidity. A complex beer with a complex story. We cut our teeth with this one.ingredients: water, barley malt, wheat malt, cherries, yeast, hops, red currants
allergens: gluten

CITRON CONFIT

This mixed fermentation is a collaboration with Domaine Emile & Rose. It’s a blend of three clay amphora which were previously inhabited by Carignan Blanc. We gave this brew a year to meld with its citrus counterparts, lemon & lime juice. The result: a harmony of candied citrus, ripe melon, and sweet green grass.ingredients: water, barley malt, wheat malt, lemon, lime, yeast, hops, lactic bacteria
allergens: gluten

ELECTRIC FEEL

This mixed fermentation is a collaboration with Domaine Emile & Rose. Among the green grass and clovers, their winery hosted our zesty brew for one rotation around the sun. It’s a blend of two clay amphora which were previously inhabited by Carignan Blanc. A generous addition of lemon & lime gives this wild fermentation an explosive citrus energy with a spicy ginger kick. For lovers of acid.ingredients: water, barley malt, wheat malt, lemon, lime, yeast, hops, lactic bacteria

GOOD COMPANION

We love saison, you should too. Its beautiful straw colour and luscious mousse make this beer too easy to drink. A humble brew where each ingredient has room to shine. This beer can accompany you wherever you go, to the river, up a mountain or at the dinner table. Like man’s best friend, it’s a good companion.ingredients: water, barley malt, wheat malt, hops, yeast

LOG LADY

This hazy IPA was brewed with stone pine tips that we hand harvested just before their buds broke open in the spring. They bring fresh resin and tannin that play nicely with the citrus and dank Tallus, Equinot, and Eldorado hops. Its hazy, not too sweet or bitter, full-bodied yet dry. Goes down like another. Beware of premonitions.ingredients: water, barley malt, wheat malt, hops, pine tips, yeast
allergens: gluten

VOTE UTILE

A tasty glass full fruit and light acidity, you could call this breakfast juice.ingredients: water, barley malt, wheat malt, mango purée, raspberry purée, yeast, hops
allergens: gluten
